Kellie and I have started a weight loss program designed by Red Mountain Weight Loss called the RM3 Program. We're not going to sugar coat things (because no sugar allowed) but...Step 1 is pretty tough... if you're like us and you spent the entire holidays eating and drinking everything in front of your face! But, the good news is it's getting easier every day.
Check out the Red Mountain Weight Loss website for more detailed information on the RM3 Program and what it entails, but basically for us right now it's select meats and a few types of vegetables and no alcohol (yikes!).
But like Kellie very positively points out, there are alot of things we CAN eat. So we've been creative in making and inventing new meals over the first week on the program.
So that poses a question I know you're thinking now....how can you make tasty food on a program like that? You can, I promise!
Here's the recipe for Chef Alanzo's Healthy Steak Salad that I threw together than Kellie RAVED about. I've cooked many times for her before with non-healthy ingredients with mixed feedback from the wifey. But, she went on and on about how much she loved this salad containing all Step 1 approved ingredients! Here's how I did it:
Stuff You'll Need
Two big bowls
Skillet, knife, cutting board, tongs
11oz Sirloin steak (5.5 oz for each salad)
Zero Cal Cooking spray (I used Pam butter flavored zero calorie)
1 bag butter lettuce (1/2 bag for each salad)
1 tomato (1/2 in each salad)
Green onion (to taste, I used about 1/4 cup per salad)
Yellow onion (1/4 onion for each salad)
Celery (half a stalk for each salad)
Sea salt
Black pepper
Garlic salt (0 sugar)
Walden Farms Zesty Italian Calorie Free salad dressing (available at Sprouts or Amazon)
Directions
In a big bowl, add the butter lettuce.
Add sliced tomato, chopped green onion, diced onion, and chopped celery pieces. Toss all the vegetables around.
Season the vegetables to taste with garlic salt. Toss them around and season again.
Trim all the visible fat off the steaks. Season both sides of the steak with sea salt and pepper from a pepper grinder.
Spray cooking spray on a skillet. Heat the skillet on medium heat until hot.
Cook the steaks on both sides until your desired doneness. I cooked mine medium rare and Kellie's a little more done. You can also grill the steaks, I just did ours on the stove because it was easier at the time.
Let the steaks sit on a cutting board for about 2-3 minutes so the meat stays juicy. Then slice into thin strips. Lay the steak strips over the vegetables in the bowl.
Grind a little more pepper on top of the salad and steak.
Serve with Walden Farms Zesty Italian Calorie Free dressing! Enjoy!
